The former Ajax and Barcelona star, well remembered for thunderous free-kicks, joins the south-coast side on a three year deal having left his post at Feyenoord at the end of the 2013/14 season.
The 51 year old will be joined by his brother Erwin who will act as his assistant at the Premier League side.
Koeman has enjoyed managerial spells in Holland with Ajax and PSV, helping both to domestic titles, but spells at both Benfica and Valencia proved less successful.
